Oh Childhood…

I had an interesting lunch yesterday with the highlight being a oldie but goodie – PB&J (well AB&P). This one is made of toasted Ezekiel bread with TJ’s almond butter, TJ’s sugar free blackberry preserves, 1/2 of a sliced banana.

I’m pretty sure this sandwich is the most comforting food ever. It and I have quite a history as I had a PB&J sandwich packed in my lunch every day through middle school. Even though I envied all the cool kids who had lunchables, I did love my PB&J. My mom would try to convince me to have other sandwiches but I distinctly remember the reason I never wanted anything else- one time there was a turkey/cheese sandwich packed without a freezer pack and it had gotten all melty and disgusting from sitting in my New Kids on the Block lunch box all morning. From that moment on I never again wanted another meat and cheese sammie. Which leads to my nostalgia with the PB&J and of course, the notes my mom would stick in the lunch box. (gotta love those!)

Everything else on the plate is pretty self explanatory except the spoonful of greek yogurt- it was just the last spoonful of the container!

After work I hit up the gym for weights and a bit of cardio. While I was there a huge storm hit. I was planning to leave but then noticed tons of people standing in the lobby waiting for the rain to stop pouring. I just decided to hop on the treadmill and get in an extra 20 minutes of cardio. Sometimes storms are a good thing.

For dinner I planned to remake the tomato sauce from yesterday and have it on the leftover zucchini. Well lets just say I should have used smaller cloves of garlic because the sauce so so spicy – in a garlicy way. It was still good and I finished the whole bowl but next time I will will remember to use 2 small cloves of garlic.

I went a little overboard on the sauce…opps, but I’m definitely still loving the raw pasta noodles.

I paired the “pasta” with a spinach salad that had avocado, feta cheese, tofurkey, green pepper, english cucumber, and TJ’s Goddess dressing.

I’m excited it’s already Thursday. This week has flown by…

I love banana on my PB sammys! :) Yay for the New Kids On The Block lunch box, I think I had one as well! :)

I actually was always a turkey and cheese child when it came to packed lunches. But now, I LOVE my pb&j combo! :)

Nostalgic foods are the best! I love your PBJ!! I used to be a lunchable kid but I hated the meat in it so I gave that away :)

That is so interesting because I never ever had PB& J growing up. I hated peanut butter and still hate jelly!!!

I liked your raw zucchini dinner. I made a good raw sundried tomato pesto once that would be delicious on top. Let me know if you want the recipe

Yeah my childhood was ALL about the PBJs. Couldn’t get me near deli meat until I tried salami, and suffice it to say I’m glad that wasn’t an “upgrade” that stuck with me. :) Your nearly-raw tomato sauce looks like a great idea though! I’m always on the lookout for fun raw recipes to entice me towards more raw meals. Happy Thursday!

Ok, first of all, I love the new look! And can I just say that the photos in your most recent posts are all just absolutely gorgeous? Not that they weren’t awesome already…it’s just something about that zucchini pasta, they really POP :)

I love the looks of that tomato sauce and am even more elated that you used the Vita-Mix to make that deliciousness. Too bad it was a bit garlicky, but it sure looks amazing!

Your lunch from yesterday has almost every color in the rainbow – it’s beautiful! And tasty, haha!

Also, I’m really glad to hear the news about your knee. Phew, I’ve had a lot to catch up on, haven’t I?! I just sent you an email as well – thank you so much for your sweet comment on my blog.

P.S. When are you coming to Chicago? Haha, I really want to meet you!

i can’t believe i’ve never thought to add the awesomeness that is a banana to a pb&j sammie. totally gonna have to make one! mmmmmmmmmmm! too awesome on taking advantage of the storm! i love it! and your zucchini pasta, too! isn’t it crazy how garlic can be spicy?! it always amazes me how roasted garlic can be kinda sweet & mellow, sauteed garlic is almost kinda smoky, and raw garlic has one helluva kick!

I had a very similair experience with turkey and cheese sandwiches. I had a melted, flattened, turkey ‘n’ cheese wonder-bread sandwich that I remember being so gross.

Occasionally I’ll have a turkey sandwich, but it needs to be toasted or grilled…otherwise I pretty much feel like gagging. :D

Pb&j with bananas are always the best. Mmm…

PB&J has always been my favorite sandwich too. My parents didn’t like it and couldn’t understand why I insisted on eating it throughout high school. But if you don’t overload it with PB (as I did in h.s.), it’s a healthy meal choice
