Tuesday’s eats were v. similar to that of Monday’s. I started with the banana oats, although this time I spruced them up with a little ground flax.

The variety of flaxseed I have currently is from Trader Joe’s. (Golden Roasted Flaxseeds). I don’t love the flavor/smell of the roasted seeds so I think next time I will stick to the raw seeds. But in general, I always buy whole seeds and grind them as needed in a coffee grinder, then store the grounds in an container in the fridge so they don’t lose their nutrients.
I ended up going to the doctor for my swollen knee. I didn’t get much advice that I didn’t already know. I need to take it easy and let the knee rest, take anti-inflammatory meds (more than I was taking already), and use warm moist heat on the swollen area for 10 DAYS!! If it doesn’t clear up I’ll need to go to a specialist. I surely hope it just clears up. Keep your fingers crossed for me.
Back at the office mid morning I had an apple for a snack. Fuji – my fav.

Home again, home again for lunch. I heated up the tofu and bok choy stir fry from last night and had some cantaloupe on the side.

I was craving something sweet and carby so I toasted a slice of WW toast and topped it with a little better n pb.

I haven’t had a slice of bread in such a long time. I just don’t really buy it anymore. I stole this slice from Iaac’s loaf- Totally hit the spot!!!
Mid afternoon I decided to have that same snack as yesterday – Friendship Whipped 1% cottage cheese with 1/4 cup of thawed blueberries. They were a little more thawed today and extra juicy- which was even better.

Right before quitting time I got hungry again so I had a large navel orange.

Isaac wanted to meet up after work at a craft store near by my gym. I met up with him and we walked to Starbuck’s for a quick coffee. I really wanted a frappuccino but decided to skip the sugar and got an unsweetened iced coffee with a bit of skim.

We sat outside and enjoyed the evening sun for a while, then I headed to the gym for an arm workout. For dinner I made salads with the fresh picked lettuce for Isaac and I, as well as, some butternut squash fries.

Tonight I tried out the new crisper pan that Isaac bought me from Macy’s. I’m pretty sure he got it specifically for butternut squash fries.
It worked liked a charm. I didn’t have to use any spray, the fries didn’t stick and they came out perfect – a little crunchy on the outside and completely done on the inside.

All together now, with a bit of TJ’s goddess dressing on the salad.

Happy Hump Day. I can say that because it’s offically 12:13AM EST. I need to go to bed!

I’m jealous of your crisper, though I do have that Tofurkey in my fridge right now, but I’ve yet to try it.

I may have missed it in a previous post, but what temp do you cook your fries at? I have a crisper pan, but somehow, they always end up coming out like charred little pieces of black ashes. My husband seems to like them that way (weird), but I can never get the crunchy/soft ratio right.

I was just wondering who makes your crisper pan. I have heard mixed reviews on many, and yours seemed to cook the fries perfectly.

Sarah, you have to try the Tofurkey. It’s become one of my weekly staples. Hope you like it. It may not be better n pb, but it tries really hard.
Melanie. I usually cook mine b-nut squash fries on about 400 for 35 minutes. Mine had a few little brown spots, but no black ashes. What temp do you usually do.. Maybe your oven temp runs hotter and you should consider reducing the temp?
Also, I don’t think your hubby is weird, I kind of like them burnt sometimes too
