Short and Sweet

Short and sweet with little to no commentary this morning because I have to head to work.

I was finally able to get my hands on some more Joesph’s middle east bakery Lavash bread. (I can only find it at Wal-Mart and I don’t go there often). I made a trip specifically for these wraps.

Lunch was a wrap of edamame hummus, sprouts, green peppers, and grape tomatoes.

I found a way that I can eat plain yogurt= Add lots of strawberries and agave nectar.IMG_0832

Okra is so hairy and slimy, but I like it.

I had my MRI yesterday and it went well. I have my follow up appointment on Thursday so I’ll let you all know what the doc says then.

After eating lots of banana bread as a “snack” I went to the gym for a quick cardio session (mainly just walking on the treadmill) and then came home for dinner of herbed tofu, bok choy, and sprouts. I used black bean garlic sauce, tamari and left over peanut sauce to season the stir-fry. It turned out delicious.

i know! i can’t even believe that it is Wed already!!! i love the abundance of TOFU in this post, and my fav- OKRA! it’s not thaaaaaaat slimey…unless you cook it!! (which is why I mask the slime by putting them in beans!) i luve the crunchy freshness!!

do you cook the okra? I want to try it but have only seen it on glidingcalms blog (raw) and had no idea how to prepare it!

I love okra! I’ve been eating okra pickles the past few days. Yum! I love the seeds.
My mother’s fried okra is still the way I like okra best.

Okra is for sure one of my favourite vegetables. It’s a little hard to find at my local markets but so good when I do.

I stumbled upon your blog and didn’t notice I’ve been flipping through your entries for hours until my son said it’s bedtime already. I love okra too and I like your picture of it in this entry. Put okra in veggie curry, really good.

ellie- I eat okra raw or cook it. Here I just boiled it for about 5 minutes and added salt and pepper. It does get slimy though.

Anne- I just boiled the okra for 5 minutes and added salt and pepper, but to be honest this was the first time I’ve ever cooked it so I should probably look into the best ways to prepare it.

hi Brenda- I dried the mango on 135 degrees for about 7-8 hours. Good luck!!
