Salad overload
I’m trying really hard to do all the right things for my knee to heal quickly and properly – moist heat, ibuprofen, elevation, REST= skipping the gym. The last part is so hard for me. I miss my normal routine and the energy I GET from working out. In turn I’ve found that it’s making me a tad bit cranky… sorry Mr. Isaac.
Oh well… since I’m not doing my usual cardio or even walking to work as usual, I’m WORKING hard,to keep my eats “clean.”
Yesterday started out fine: oatmeal, oatbran combo, 1/2 of a banana in the mix and some trying to be Better N’ PB on top.

Mid morning I broke out some cubes of perfectly sweet cantaloupe. I am loving this melon right now.

Lunch at home, salad with fresh lettuce, brocc, shrooms, lots of garbanzo beans, and I used salsa as the dressing.

On the side I had a small heart, I mean sweet potato. Maybe it’s because I’m a v-day baby, but I love hearts so this little potato made my day.

It got a little over done in the microwave, but was still edible. And, I ended lunch on a sweet note with a few raisins.

After work I headed to Isaac’s school for an “art gallery” and “dinner” The art gallery was actually self portraits painted by his 1st-5th graders framed and on display for their parents to purchase. The dinner turned out to catered appetizers- I didn’t get any pictures but the highlight was definitely fruit kabobs dusted in coconut and cinnamon on coconut milk soaked skewers (awesome.. right?) Well the fruit was as lovely as it sounds, but wasn’t quite cutting it as my dinner so I also had crab dip, pesto encrusted cheese on crackers, spinach filled puff pastries, and about 10 pretzels- some were dipped in yogurt, others in chocolate. Overall, it wasn’t clean eating or what I really wanted to be eating but it’s what was there…
I jumped back on the wagon this morning with plain oatmeal with 1/2 of a banana cooked in. I haven’t had plain oatmeal since I was introduced to oat bran- I’ve been doing the combo thing, but I enjoyed the chewiness of the oats all alone this morning. Lunch ended up being an egg white with pepper and hot sauce AND a big salad with salsa as the dressing. I don’t think I’d tried salsa on salad until this week, but I am totally loving it!


I knew I wanted butternut squash fries for dinner, but didn’t know what to have with them. So I had a salad (what else is new?) I did throw in some different ingredients- feta cheese and TJ’s sweet poppy seed dressing.

Salad and garbanzo bean overload these past couple days…. but I’m not complaining.
And just when things start to get boring around here, I have some exciting stuff coming up soon….. so get ready.
Plus, it’s almost FRIDAY. HOORAY! It’s going to be a busy one for me. Work all day then off to my niece’s dance recital which is a 2 hour drive away… whew. I’ll probably be back with a post on Saturday. Until then…..

Yummy salad! It’s hard to overload on salad, really. I like that I can eat a huge volume of spinach and vegetables and not really consume that many calories.
Good luck with your knee. I’d hate having to skip the gym even if I knew it was good for me.

Garbanzo beans are one of my favorite beans besides black beans. You just reminded me how long it’s been since I’ve eaten them. Must buy this weekend!

having your knee being injured has gotta be frustrating! i’m sorry, Brittany! that’s no fun! and i hear ya on working out and getting energized from it – i would be cranky as well if i couldn’t work out! hang in there! your salad with the chickpeas looks awesome, and i love the little heart shaped baked sweet potato – it’s too cute! i totally do the same thing & have raisins sometimes after my lunch – i love the texture and the sweetness – it’s the best! fruit kebabs dusted in coconut and cinnamon with even more coconutty goodness sounds heavenly, and puff pastries!?! mmmmmm! good stuff on starting out clean again in the morning though – you’re too good! i need to try that poppy seed dressing – next time i’m @ TJs i should remember to pick some up! i can’t wait to hear about the exciting things, and i too say hooray for Friday! superw00t!

So sorry aboout your knee!! At least you have been having some great eats lately!! Mike went to dinner somewhere in Richmond tonight before VCU’s graduation. (I’m home working on my thesis….ya know, or reading blogs….

I am going to try to guess the restaurant before he does the post… was it CAN CAN? If so, I love the interior of that place… so pretty, but I’ve only eaten there twice. If you ever come to Richmond it would so fun to we meet up.
