If you usually read from Google Reader, you won’t notice, but I changed my layout. I thought it was about time, considering I’ve been using the same ol theme for OVER at year. What do you guys think? I’m not totally sold on it yet.
In midst of blog changes I also made a huge change in my breakfast this morning. Instead of the usual oats I decided to have a very vibrant Sierra Nevada at 7:30AM.

I totally gotcha, didn’t I. No really, I decided to explore the world of drinking vegetable juice for breakfast. Now I’ve had my juicer for quite sometime, but haven’t really put it to use that often. Isaac and I juiced some oranges and some pineapple (both delish, btw, but who doesn’t know that). So this morning was a real experiment on my part. I decided that if a mom of two can have juice for breakfast and have plenty of energy, I should be able to sit at a desk all morning. So I looked online for some juice combinations and in the book You Are What you Eat and decided to use 2 carrots, 1 beet, and 1/2 of a large fuji apple. (I ate the other half of the apple raw).

I did have some protein on the side.

Turns out the beet juice was very prominent – as noted by the color of the drink, the color of my pee throughout the day, and also in the flavor. It tasted very beet like, and smelled very earthy (hence the term root vegetable, Brittany). To be honest it was a little hard to drink the whole glass, but I did. I think I could have easily chopped the beet in half (or even quarters) and used more carrots and apple. Although, it was actually very sweet so I don’t know. I’ll have to play around with the combination to find my taste I guess. Any suggestions from pro juicers out there would be much appreciated…
Overall, the juice and almonds held me over well. I had a handful of grapes mid morning but wasn’t hungry again until lunch. I came home and whipped up a delicious salad.

The highlights of this salad include home-grown romaine lettuce, mushrooms, broccolli, raw okra, and a quarter of a BIG avacado. YUM!
When I came home for lunch a package of goodies was at my door – Food Should Taste Good Tortilla Chips! Of course, I had to incorporate the goods into my lunch. I LOVE sweet potatoes and had been wanting to try the sweet potato varitey for a while now so I dug right in. 


The nutritional facts are pretty good for chips and what even better is that the tortilla chips are made from the highest quality, all-natural ingredients baked. All chip varieties are gluten free, cholesterol and trans fat free, and do not use genetically modified ingredients (GMOs). I’ll be trying the other flavors I received and reviewing them as well, but the sweet potato varitey was good. I like the heartiness of the chip- perfect for dipping in salsa. The sweet potato flavor wasn’t all that pronounced, but I like the slight sweetness. And, I love the short ingredient list. Makes me feel better about eating chips.
I brought some macaroons into work to share- too bad I had one at home for an after lunch snack and then had another back at the office for an afternoon snack. There so good! But at least their a healthy treat right?

So despite my macaroon munching, around 5 I got a little hungry. I knew it would be a while before I ate dinner so I pulled out some TJ’s Greek yogurt.

I love this flavor and the yogurt is so thick and creamy, but probably not the best idea. Now it’s 8 and I’m still not hungry for dinner. Either this yogurt’s got staying power (I’ll have to keep that in mind) or my tummy is reacting funny from all the Advil I’m taking for my knee (which doesn’t really seem to be helping- I’m still swollen).

Thanks for the shout out! I am SOOOO having juice in the morning. I think its been two days and I’m craving it. I agree, a full beet can be a little overwhelming. I’m going to cut back on the beet too.
Here’s my fave combo, which I WILL be having in the morning: 3-4 carrots, 1/2 to a whole apple, 1/2 a red pepper, 3-4 strawberries. YUM!

I love pear juice – soooo much better than apple!
As for juicing, most everything you juice will taste sweet. Why? I don’t know! I just learned recently that you’re never supposed to drink the juice of more than a 1/4 of a beet at one time. The hubby and I share one (so 1/2 a beet each) all the time, and I’ve never had the symptoms they describe, so I think I’m okay with that. Google it, if you want more details

Andrea- Thanks for the juicing info. I’ll have to try a pear! I looked up stuff about juicing beets before I made my combo and I saw what you are referring to, but I also saw that other bloggers had been using whole beets so I thought what the heck and was a rebel. I didn’t experience any of the symptoms, besides pink pee, but I wish I had used less because the flavor was intense.
