Holy Guacamole!
After all that Cinco De Mayo hype guess what we decided to do? Stay home, eat guac and tacos and do work. I had a press release to work on and Isaac is prepping for his summer of torture training. It’s not really as bad as I’m making it seem, it’s just a really intense program and he’ll be gone for most of the summer. I’m gonna miss him hardcore.
Anyways, back to last night. Thanks to Isaac’s wonderful mashing skills our guacamole turned out fabulous.

Holy avocado.

Red onion, jalapeno (garlic, tomato and fresh cilantro from our back porch not pictured)

The guac was the main entree and was served with a side of shrimp tacos.

Shrimp, green pepper, red onion, garlic, and salsa all wrapped up in a Reduced carb Wheat tortilla from Trader Joe’s.
Perfect Cinco De Mayo meal! And, best of all we have left over guacamole. This, I am very very excited about. I almost had it for breakfast but got distracted by the fact that we have 9 boxes of cereal to choose from.

I actually have to admit that the only cereal I bought myself was the Kashi Go Lean (my fav). All the Barbara’s Bakery cereals were purchased by Isaac. He called me yesterday from the grocery store really excited because all Barbara’s cereals were on sale for $2.14 a box! (Usually Barb’s cereal is over $4.) Seriously, it was too cute how excited he was about cereal being on sale. Needless to say, I requested PB Puffins. He picked 3 other boxes. I’d say were set on cereal for a while!
I was enticed to try the Ultima Pomegranate this morning.

Topped with 1/2 banana, sliced strawberries, and unsweetened almond milk.

The ceral was really good, I liked it better than I thought I would. The whole grain flakes had a nice crunch to them and it was sweet, but also had a hint of tang. I also spotted some plain oats in the mix. I was a little bummed to read that one serving is only 1/2 a cup, but then again the 1/2 only has 100 calories. Overall, I liked it but I Kashi Go Lean still ranks highest in my book.
Today was really busy at work- but for a good reason – we won an award- woot woot! But anyhow, I am heading to the gym tonight. I was thinking about skipping it, but I’m doing The Fitnessista’s Summer Shape Up and I really want my 3 points for toaday.



That guac looks amazing! You can’t beat homemade guac, but Chipotle does come pretty close!

ooooh, that’s some seriously awesome look’n guacamole, Brittany! we had some guac last night over some mexi-bowls! mmmmmm! adding in a little red onion is my favorite! your cereal collection = awesome! dan loooooves cereal the most! too funny on the puffins, they’re my favorite! i love the peanut butter ones! totally going to see about the pomegranate cereal – i like the sound of it: crunchy, tangy, a little sweet! sounds like a great combination!
