3 day weekends are the best, no?
I am pretty excited about it if you can’t tell. We have some plans- my Dad is coming to visit and 2 cookouts to attend. It should be fun.
Backing things up to Friday. My stomach was still out of wack and I didn’t have much of an appetite until later in the evening (after 2 glasses of wine, interestingly enough, haha)
For breakfast I kept things simple. Plain old fashioned stove top oats with 1/2 of a banana cooked in.

This was a nice change from my normal 1/2 oatmeal, 1/2 oatbran combo. The had forgot how chewy oatmeal is on it’s own!
Knee Update:
I wanted to let you all know that I went to the doctor for my swollen knee and found out some pretty disappointing news – I have a lateral meniscus tear in my left knee. Not sure when exactly it happened, but the swelling was due to leaking joint fluid. I go for an MRI on Tuesday to see how bad the tear really is. Until them I’m not going to stress over what could be, but I’m praying that the tear is small to medium sized and it can be rehabilitated with physical therapy. Needless to say, no running for me right now. The doctor said that if it doesn’t hurt I can still walk and ride the bike so at least I have options when it comes to physical activity. I was literally going stir-crazy over the past 2 weeks without any cardio.
After getting back from the appointment, I wasn’t really hungry for lunch and I decided to eat exactly what I was craving- Food Should Taste Good Sweet Potato tortilla chips and TJ’s garlic salsa.

A few sliced strawberries and a chopped plum.

I realize that this is a pretty unbalanced and small lunch, but I wasn’t hungry for anything else.
While at work I grabbed a handful of VA salted peanuts mid afternoon. These are addictive they are always out in the office kitchen. Most times I just try to pretend they aren’t there because once I get a handful I will keep going back for more. Yesterday it turned out to be fine since I didn’t have much of an appetite.

Once home from work I kept craving spring rolls again. I whipped up 4, gave one to Isaac and ate the other 3. Isaac said it was the best spring roll he had ever had. Either my spring rolls are awesome or he was just being nice. Try the recipe and let me know. After dinner we walked to a local sushi restaurant that has outdoor seating to meet some friends for a drink. It was such a nice evening to sit outside and relax. Isaac and I got a bottle of merlot and I had about 2 glasses. So relaxing!!

Our friends stopped by on the way home and I made them try the macaroons I had made. I had put a mjority of them in freezer so they wouldn’t go bad. Instead of waiting for them to thaw we decided to try them frozen. Here’s the fro mac.

Doesn’t look much different, but they are soo good- the perfect summer treat. Isaac even said he liked them better frozen.

I’m so sorry about your knee, but at least you know what it is now and you won’t do any further damage. I start PT next Friday, and I’m actually enjoying the walks and elliptical for now. Like you said, you have options and you’ll find a way to move. I will pray that it is only a minor tear and that you are back in action soon!

oh my gosh, Brittany – i’m so sorry about your knee! i hope it ends up being very minor and that physical therapy does the trick. my dad tore his knee last year and had to go through some minor surgery, but he’s back to running now – and they too told him he could bike all he wanted – he totally bought a great road bike and rocked it out. i’m glad you can get back to cardio, even if it isn’t running – biking and walking are awesome, too! i’m sending hugs & happy thoughts your way!
i’ve gotta get off my bum & make some macaroons – totally gonna try freezing a few as well! dan & i loooove freezing cookies to enjoy! mmmmmm!

At first I thought you were talking about frozen macaroni & cheese! Frozen macaroons sound much better.
