100% Yum

I didn’t get to do as much baking/cooking as I would have liked this weekend, but I did muster up the time to make 2 delicious creations. The first started with some rotten naners. I had 2 very much brown bananas that were screaming to be made into banana bread. I remembered this recipe from The Fitnessita and got to work. I followed the recipe exactly for the first loaf (minus the raisins and all spice subbed in for the nutmeg).

For the second loaf I sweetened things up and added some mini chocolate chips.

Although baking made me miss the gym yesterday morning. It’s all good because the house smelled heavenly all day and the bread turned out fabulous! It’s incredibility moist despite not having any oil or butter. And, I love the flavor of the organic sucanat, its molasses taste simply shines in this bread. Much thanks to Gina for sharing this recipe as she is the true the mastermind behind the bread.

While the bread was baking I also had another treat sun bathing in the dehydrator.

Just Dried Mango

I am elated to be able to make this on my own at home.  I LOVE dried fruits and mango is one of my favorites. Plus this method is much cheaper, greener (less packaging), and healthier (no sulfur or sweetnered added)- gotta love it. I can’t wait to experiment with other fruits.

Back to work today, it’s going to be a busy one because we released a new version of our product over the weekend!!

Your dried mango looks fantastic! Glad you’re breaking in the dehydrator! Oh and by the way, the ‘naner bread = yum :)

I love making dried mango in my dehydrator – but I’ve learned to cut the slices real thick otherwise they’re sharp, thin little spears!

YES! that banana bread is soooo good! so funny- i saw two very ripe bananas in the freezer and was thinking of making a batch today. i’m pretty sure you convinced me :D thank you for the lovely shout out!

Dried mango sounds wonderful!
Love the idea of a whole-wheat quick bread. I bet the wheat adds a great taste.

Dried mango is my favorite dried fruit besides pineapple! My mom is allergic to sulfur so I think I need to get my own dehydrator because it is a lot cheaper and sulfur-free!
