Kabocha Experiences

The last time I went to our local Asian market I picked up a Kabocha. It’s basically a Japanese winter squash that looks like a green pumpkin. Maggie has been talking about this Japanese squash for a while now and since I love butternut squash I knew I needed to try it.

For my first kabocha experience I left the rind on and cut up peices to be boiled. It cooked very quickly and was easily pierced with a fork after about 6 minutes. I sprinkled on the sea salt and pepper and served it with a lettuce wrapped bean burger.

A couple days later I used the rest of the kabocha to make fries using the same method as I do with butternut squash- chopped pieces (plain) in the oven on 400. It cooked up faster than butternut squash and the fries were ready in about 25 minutes.  My kabocha thoughts? I really enjoyed it both ways it was prepared. It was sweet, and very similar to butternut squash but cooked faster. I also like that you don’t have to worry about peeling the rind off, as it softens during cooking. Although I did find that when it was baked the rind didn’t bother me at all, however when it was steamed it, I didn’t care for the rind as much so I didn’t eat it. The softness of the squash after steaming reminded me of mashed potatoes and now I totally want to make mashed kabocha. Perhaps something I should try out sometime this week!

It you like b-nut squash I highly recommend trying kabocha.

So last night we decided to be social and attend a party- what what! There was a keg of beer, flip cup, jungle juice, a blow up pool, and beer pong, but I’m pretty sure the highlight for me was this little bundle of joy (does this mean I’m old?). An 11 week old Schnauzer named Gizmo. Is he not the cutest little thing ever (besides Olive, of course)?

Isaac and I had lots of fun taking these…..there are more but I will spare you. However, this one deserves to be large as it’s the BEST!

As you can tell he was wiped out, as it was a long night of being cuddled by every girl (and guy for that matter) at the party.

I woke up this morning to a lovely bowl of chia oats.

I’m still loving the chia seeds…. I need to go buy some more because my small stash is running low.

I hope everyone is having a lovely weekend. Here’s my big agenda for the day: grocery store, gym, and then a work related party to celebrate the release of a new product.

Sparklin, My Darlin

Before college I had only ever had plain ol water and don’t get me wrong I love me some regular h20 – I think it tastes amazing, refreshing, and it’s basically the only liquid I drink throughout the day. However, since being introduced to sparkling water while traveling aboard,  I have started buying it occasionally. I like it because it feels like I’m having a treat (without any extra calories) and it makes me feel full.  Plus it mixes well with vodka for a low-cal cocktail (think vodka, lime and soda water). My favorites brands are Poland Springs Raspberry-Lime or plain Lime, LaCroix Lime, and San Pellegrino.

As you can tell I’m fond of my sparkling water so I was pumped when the kind people over at R.W. KNUDSEN offered to send me samples of their new product Sparkling Essence.

Sparkling Essence combines the flavor of organic lemons, mint, whole blueberries, and fresh cucumbers with the tingling sensation of sparkling spring water to create their 4 flavors.  Their water contains only certified organic ingredients and doesn’t have any calories, added sugar, or artificial ingredients.

I’m a little fruit crazed so as soon as the drinks were cold enough I popped open a blueberry.

It was really good! The flavor of the blueberry wasn’t overpowering, and in my opinion, it shouldn’t be in sparkling water. But, the tingle was definitely there, which is a good thing. TWSS (I coudn’t resist).  I was intrigued by the cucumber flavor and decided to try that one today. Again, the cucumber flavor isn’t strong but it’s there in a nice refreshing way and I have a thing for cucumbers. This flavor almost felt spa-esque. I liked it!  I’m certain I will enjoy the lemon because I love citrus fruits in water, but I’m a little skeptical about the mint.. I just hope it doesn’t taste like liquid gum. I’ll be sure to let you know if it does.

Overall, after trying the cucumber and blueberry flavors, I really like these drinks – their calorie free, organic, natural, and perfect for when you want to reach for something else besides the Brita filter. Check out their site to find out where you can find R.W. KNUDSEN products.
