Sorry I’ve been absent for a couple days; I can explain. I was home sick all day Tuesday and didn’t really leave the couch, except to get my computer charger, eat, heat up water for tea, and use the neti pot (don’t knock it til you tried it.. this little pot is awesome). For some odd reason my appetite was still in full force while sick. Probably best case scenario- all the nutrients I consumed probably helped to heal me faster. I’m still not 100%, but definitely feeling much better!

Later in the afternoon on Tuesday I started getting bored with being a couch potato and decided I should use my second sample packet of PB2 to make Peanut Roasted Garbanzo Beans.

Yum. Peanut Butter Boy is genius. I would like to try to save these little gems for his trail mix recipe, but yea, I just don’t really see that happening… they’re too good plain.

Baking, roasting rather, lead to more baking. Chocolate Chip Meringues for Passover. I made them last year and they were a big hit, so I decided to go with what works and make them again!

Wednesday evening was passover Seder. We drove to Isaac’s grandparents house forĀ  feast of all things unleavened. It was fun. Isaac’s mom made steamed kale that was out of this world.. and I got the recipe.. oh yea… so be get excited for its debut in the near future.

I other cooking news I’ve been trying to make my version of Ellwood Thompson’s Goddess Tofu Wrap. Here’s where I’m at right now.

I’m still perfecting my version of the recipe, but once I’m finished I will be sure to post it.

    i’m glad you’re feeling better – even if you’re not quite 100% yet. i bet you’ll be feeling awesome by the weekend! yay!

    oh yeah – and i found some ginger hermits the other day! oh my gosh – they’re so deeeelicious! i think i’m addicted!

    the goddess wrap is one of my absolute favorites from ETs! yours looks AWESOME! i would love your recipe once you perfect it! i used to work there waaaay back in the late 90’s (this is what one calls “dating themselves”, yeah? ahhahaha!) and i kinda remember how they make that oven-baked tofu (although you’ve probably figured it out already). they’d marinate their bulk herbed tofu (the twin oaks tofu) in some tamari (@ home dan & i use liquid braggs), then coat it with cornmeal that’s been mixed with spices (we used a little cayenne, sea salt, paprika, black pepper, and chili powder). bake it up & you’re all set to go. mmmmmmmmm! i love that local twin oaks tofu SO much (and their tempeh)! i also love ETs hummus wraps! they’re so colorful and tasty – i just wish they’d put more hummus in them!

    your meringues are perfect! and those peanut roasted chickpeas = brilliant! i’d love the kale recipe, too! i super love kale the most! ooooh, i can’t wait!

    I totally want to try out those peanut butter chickpeas, but I wish it used real peanut butter. I don’t want to buy psuedo peanut butter just to make them.
