Told ya so

I told you guys it wouldn’t be long until I made some more bean burgers. Less than a week later and I’m whipping up another batch. This Sunday I decided to make some for later use. I used the same recipe but there were some changes including two beans instead of one, basil, and some shrooms. I used chickpeas, along with the standard black beans. 1/2 can of black beans and 1/2 can of garbanzo beans. (Drained and rinsed.)

Here’s everything all pulsed up in the food processor. The greenery is basil this time instead of parsley.

And then there were patties! After mixing the pulsed beans with the binding ingredients I made 5 patties with the mix. Here are the burgers all ready for cooking.

I cooked the burgers in the skillet, let them cool for about 2 hours and then put them in the freezer for quick weeknight dinners. I can’t wait to try them!

Last night we were invited to Isaac’s parents for dinner. It was delicious- as usual, his mom is a fabulous cook.

I had some carrots and zucchini with hummus but no dolmas (stuffed grape leaves) as I’m not a huge fan of those. The main dish was pistachio encrusted salmon and sun-dried tomato tuna steaks.  The pistachio salmon was delightful. She got the mix for the “crust” from Whole Foods and I definitely recommend it to anyone who likes pistachios. I’m pretty sure you could easily make you own pistachio crust as well though!img_0584

We also had one of my all time favorites- roasted broccoli!!

After work today I went with a co-worker to her gym as a guest. We went to ZUMBA!!  It was awesome and I was really sweaty by class end. I’ve been missing it so much, as my gym doesn’t offer it. There are some zumba classes around here , but they aren’t close to my house and I can’t justify spending the $ on the classes when I get free classes at my gym that I could go to instead. Still, sometimes you just need zumba so I have paid and drove for it before. :)

After zumba, ellipticaling, and some legs we headed out from the gym. I stopped by Trader Joes and Whole Foods on the way home just to grab a couple things. Then rushed home to eat dinner. I was starving! Tonight’s mega salad with the usual veggies, plus a new one -OKRA! I watched GC’s video today and decided I needed to try  raw okra. I picked some up on my way home from the gym and ta-da okra in the salad. It’s a bit slimy, but I really enjoyed the crunchiness of it raw.

The dressing is Tj’s goddess dressing, which if I haven’t mentioned, I LOVE it!

Last but not least, it’s really hot in our house! We are afraid to turn on the AC because we have these little things living on our AC unit. I have to admit, they are  cute. but apparently people have gotten sick from birds living close to AC units, as they poop and then the air blows that in your house. Needless to say we are scared to turn it on- we don’t want the mom to leave the baby and we also don’t want to get sick.

Are there any ornithologists out there that know what kind of birds these are?

I loved that you mixed the beans! I can never decide to use black beans or chickpeas.

Them are brown birds ;)

Beautiful birds! They look like they might be a dove species, or at least remind me of some dove species I’ve seen before. But, I’m not really a birder, and probably wouldn’t know the birds in your area anyways.

The burgers look awesome :)

OMG that tuna looks DIVINE! Sad about the birds having to move, but it’s probably a good idea for them to get a new home before you turn on the AC!

I OWN THAT EXACT SAME PLATE. -Where the burgers are all ready for cooking. &….I use that plate for the same job. haha. just had to point that out.
Anyway. I’ve never tried Garbanzo & Black Beans in the same burger. I shall try that next. Good Stuff.
