Bring on the Weekend
I made it out of bed this morning at 6:20 to go to the gym. I must say, I am getting better at this morning workout thing and I really like it. After stair milling for 45 minutes with only a 1/4 of a PURE BAR in me, I was HUNGRY. I knew I needed to shake things up this morning from the normal oats. I bought a 24 pack of Morning Star Veggie Sausage Patties and I’ve only used about 2 of them. I also have my Joseph’s Lavash Bread to use up so I decided to make a little breakfast wrap with a spread of laughing cow, “sausage”, 1 egg white, maters, spinach, and some pepper.

I’m just kidding, these aren’t really SP fries (although I would totally love it if I had made myself mini sweet potato fries). These are actually sweet little Persimmons. Just Persimmons to be exact!

I had never had these before and Isaac brought them by my work yesterday afternoon because I wasn’t feeling well. Such a sweetie. Well the package says this little container has 4 servings. I beg to differ, there’s probably 1.5 max -the container is almost empty and I’ve had it 1.5 days. They’re that good.
Lunch was a big spinach salad with Hickory Smoked tofurkey. I love having the tofurkey, tomatoes, and banana peppers on salad- it doens’t even need any dressing. I also had a piece of the lavash bread with laughing cow.

On the side I had a lunch dessert. 3/4 of a Cherry Cashew Pure Bar.

INGREDIENTS:
Organic Dates, Organic Cherries, Organic Walnuts, Organic Agave Nectar, Organic Almonds, Organic Cashews, Organic Brown Rice Protein, and that’s all! (unless you count the 15 essential vitamins and minerals, antioxidants from cherries, and healthy Omega 3 fats in every bite). Nothing cooked. Nothing processed. Completely

At this point I have tried 3 of the Pure Bar flavors and I have to say that I really liked this flavor. The fresh dried cherry taste was on point- a nice mix between sweet and sour. I also love cashews so the combination was perfect. Again, the Pure Bars remind me of LaraBar, and I don’t like all that the bar has added sugar from the agave nectar. I know sugar from fruit and agave nectar is better for me than plain sugar or HFCS, but I still don’t love that these type of bars have so much sugar. For this reason I like to cut them in half and eat them as mini snacks.
I think out of the 3 PURE BARS that I’ve tried I the Cherry Cashew best!!
Just as I am saying I like to eat less sugar in bars.. I go and eat the trail mix below as an afternoon snack. Don’t judge

Dinner ended up being left over fro tu stir-fry with veggies and left over brown rice from PF CHANGS! I went there for lunch yesterday, but didn’t post about it because I went with the sales team from work and they don’t know about the blog. I got the Buddha’s feast-steamed, sauce on the side, brown rice, and shared vegetarian lettuce wraps with the table. I love that place!

I steamed frozen stir-fry veggies, heated the fro’ tu in the toaster oven on 250 degrees, mixed the two items together with a little teriyaki sauce, and placed the mix on a bed of the Chang’s brown rice.
I’m so ready for Friday. Does anyone have any grand plans for this weekend? I know I don’t, but I am pumped because I love weekends, even if I have nothing planned. Don’t we all…

AM workouts are THE BEST! It’s so nice knowing that at the end of the workday you can just go home and crash!

I love changs! they are vegan friendly! i’m gonna try my version of their coconut curry veggies on Sunday – we’ll see how it turns out!!

weekend are the best! and having not a lot planned rocks hard ’cause that means you have lots of time to fill with awesomeness! this weekend i’m up in DC running the Cherry Blossom 10 miler (and enjoying post-race vegan yummies around DC)! yay!
i’m always really hungry after a morning workout, too! kinda CRAZY hungry! your idea for a breakfast wrap is stellar! and the “just persimmons” sound great! that’s very sweet of Isaac to bring them by your work for you when you weren’t feeling so hot. oh-so awesome of him, fo ’sho!
i love me some PF Changs – dan & i usually split an large order of the sauteed asparagus & the coconutty-tofu-curry dish! mmmmmm! next time i’m gonna have to try out that Buddha’s feast! hooray for combining leftovers for one tasty meal! i love it!

Ahhh I want the weekend too. Those Just ____ products are so awesome – expensive though! And they go by so quickly. Definitely fewer servings than they say
