Tasty Tuesday

by eatingbirdfood on April 28, 2009

I had a banana split for breakfast. See:

  • 1/2 banana slices
  • 2 strawberries sliced
  • 3/4 cup kashi go lean
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 scoop chocolate whey protein powder

After dessert for breakfast I decided to do salad for lunch. In my last post about sushi I talked about ordering seaweed salad but always wanting more. Well, I took Cecilia’s advice about finding seaweed salad at a local Asian market. What a great idea!! I got this container for $2- it’s much more than I would have gotten at a sushi place. I also looked up some recipes and found a few so perhaps I’ll make my own seaweed salad.

I had this little container for lunch, along with a regular salad.

For dinner tonight I took one of my black/garbanzo bean burgers out of the freezer, cooked it up, and ate it on an ezekiel english muffin with sprinkles of feta cheese, tomato, and lots of ketchup. I also made some kale chips- although they were made from bagged kale that was chopped,  l so it ended up being kale crumbs.  :)

The burger was delilcous!! I am loving homemade bean burgers!

Told ya so

by eatingbirdfood on April 27, 2009

I told you guys it wouldn’t be long until I made some more bean burgers. Less than a week later and I’m whipping up another batch. This Sunday I decided to make some for later use. I used the same recipe but there were some changes including two beans instead of one, basil, and some shrooms. I used chickpeas, along with the standard black beans. 1/2 can of black beans and 1/2 can of garbanzo beans. (Drained and rinsed.)

Sautéed  red onion, garlic and the another additional ingredient, shrooms.

Here’s everything all pulsed up in the food processor. The greenery is basil this time instead of parsley.

And then there were patties! After mixing the pulsed beans with the binding ingredients I made 5 patties with the mix. Here are the burgers all ready for cooking.

I cooked the burgers in the skillet, let them cool for about 2 hours and then put them in the freezer for quick weeknight dinners. I can’t wait to try them!

Last night we were invited to Isaac’s parents for dinner. It was delicious- as usual, his mom is a fabulous cook.

Hummus appetizer plate to start:

I had some carrots and zucchini with hummus but no dolmas (stuffed grape leaves) as I’m not a huge fan of those. The main dish was pistachio encrusted salmon and sun-dried tomato tuna steaks.  The pistachio salmon was delightful. She got the mix for the “crust” from Whole Foods and I definitely recommend it to anyone who likes pistachios. I’m pretty sure you could easily make you own pistachio crust as well though!img_0584

We also had one of my all time favorites- roasted broccoli!!

After work today I went with a co-worker to her gym as a guest. We went to ZUMBA!!  It was awesome and I was really sweaty by class end. I’ve been missing it so much, as my gym doesn’t offer it. There are some zumba classes around here , but they aren’t close to my house and I can’t justify spending the $ on the classes when I get free classes at my gym that I could go to instead. Still, sometimes you just need zumba so I have paid and drove for it before. :)

After zumba, ellipticaling, and some legs we headed out from the gym. I stopped by Trader Joes and Whole Foods on the way home just to grab a couple things. Then rushed home to eat dinner. I was starving! Tonight’s mega salad with the usual veggies, plus a new one -OKRA! I watched GC’s video today and decided I needed to try  raw okra. I picked some up on my way home from the gym and ta-da okra in the salad. It’s a bit slimy, but I really enjoyed the crunchiness of it raw.

The dressing is Tj’s goddess dressing, which if I haven’t mentioned, I LOVE it!

Last but not least, it’s really hot in our house! We are afraid to turn on the AC because we have these little things living on our AC unit. I have to admit, they are  cute. but apparently people have gotten sick from birds living close to AC units, as they poop and then the air blows that in your house. Needless to say we are scared to turn it on- we don’t want the mom to leave the baby and we also don’t want to get sick.

Funny enough, now EatingBirdFood is actually featuring birds:

Are there any ornithologists out there that know what kind of birds these are?

Groovin Wedding Crashers

April 26, 2009

As I mentioned yesterday, Isaac and I crashed a wedding party last night. Well, technically we were invited by the groom’s nephew so we weren’t really crashing it, but it kind of felt like we were. It was an interesting party actually because the bride and groom are an older couple who had been together [...]

It's a Scorcher

April 25, 2009

After work on Friday Isaac and I walked to Ellwood Thompson’s to grab some dinner. We ended going for the sushi counter. I got a Summer Roll which was crab, shrimp, avocado, carrots, cucumbers and lettuce all wrapped in a rice paper wrap with a sweet spicy chili sauce. Isaac got a salmon roll and [...]

No need to get excited

April 24, 2009

To everyone that commented on my last post about never seeing bagged kale before and wanting to find it… The good news is that it’s a Glory Foods product and I found it at regular ol’ Kroger. The not so good news is that this bagged kale is supposedly ready to cook (prewashed), yet my [...]

Sesame Kale Mixture

April 22, 2009

I feel bad calling this a recipe because it’s so easy, so I’ll call it a mixture. The main players featured above compliment one another quite nicely in the dish below. Sesame Kale 3 cups of fresh kale 1 1/2 tbsp Tamari/Shoyu/Soy Sauce 1-2 tbsp Eden Organic Gomasio (Organic roasted sesame seeds, sea salt, and [...]
