Tasty Tuesday

This morning I woke up for the GYM! I love the feeling of getting my workout in early. A new book to read while stair mastering made the time fly by.

Once I was home and dressed for work I sat down to a filling bowl of neapolitan cereal. The base cereal was Kashi Go Lean, per the usual. I added in Enviro Kids Koala Crisp cereal, sliced sweet strawberries, unsweetened vanilla almond milk,  and a 1/4 scoop of vanilla protein powder.

The morning at work went by quickly and soon enough I was headed home for lunch.

I couldn’t decide whether I wanted a salad or a wrap, but ultimately decided I needed to use up my lavash bread before it goes bad so a wrap it was. I warmed up some mashed black beans and then added some spinach, onions, tomatoes, and salsa. It was delicious. I will definitely be making more of these little wrapritos.

On the side I had a NEW product: Better Whey of Life All Natural Non-Fat Yogurt (Acai Mixed Berry).

my thoughts:

This yogurt wasn’t as thick as the Greek yogurt that I am used to but it was still really creamy and flavorful. The flavor was just sweet enough to cut the sour yogurt flavor, just how I like it.  I didn’t taste anything odd from the huge amount of whey protein. Overall, this yogurt was delicious, and really FILLING! I guess that’s what the 15 grams of protein are for. :) I like that it has less sugar than most yogurts, no fat, and 3 grams of fiber (this is considerable because most yogurts don’t have fiber) and only 145 calories. I will definitely be looking for it at Whole Food’s next time I go.

I ate it plain so I could get the full flavor without and additional flavors from granola, but then I decided I wanted some crunch and added some Cascadian Farm granola to the last couple bites. Then I ate some granola by the handfuls.. never a good idea because I can kind of get out of hand when eating things like cereal or granola by the handfuls, but it was tasty.

Lets just say I was really full walking back to the office!

Dinner was early because we are suppose to be attending a board game night at a friends. I made a favorite of mine, tofu & veggie stir-fry! You can never go wrong with stir-fry. It’s so quick, cheap, easy, and tasty.

I stir fried thawed frozen tofu in a Pam sprayed skillet with garlic powder and in a couple T.s of San-J Organic Tamari (wheat free soy sauce). Once the tofu was crispy I removed the tofu from the pan and added frozen veggies from BJ’s (a Costcoesque wholesale store we have here in VA). After the veggies were steaming  I added a T. of Veri Teriyaki sauce and then stirred in the tofu.

I’m pumped because I still have a bowl of stir-fried tofu left over!

I had never frozen tofu before so I was excited to see how it was going to turn out today. I don’t know that this is the correct method (it’s basically a conglomerate of my internet research), but my tofu turned out stupendous, so here’s my method I used for Freezing Tofu:

  • I took one block of firm tofu out of the pack and drained the water with a paper towel.
  • I cut the block in half and stuck it in a zip-lock storage bag, then placed it in the freezer.
  • The tofu was frozen for about 3 days, but I don’t think it matters how long you freeze it for.
  • I took it out to thaw on the counter today at lunch time. (The color of the tofu was an light yellow color and the texture had changed into a sponge.. online sources say this is normal)
  • When I came home, it wasn’t fully thawed so I put the tofu in the freezer for a few minutes on the defrost setting, I cut the blocks into cubes and stir-fried the little sponges.

The result: I loved the texture!!! It turned out crispy on the outside with a spongy middle. I like regular tofu still, but I will totally be freezing tofu again fo shu! If you haven’t tried this method, I totally recommend it.

you’re so right, stir-fries are wonderful quick meals~ I’ve had frozen tofu before too, it’s great, it absorbs more flavor than usual tofu! :D

I would never think to freeze tofu. It looks like it gives it a very interesting texture that would be fun to try out. Love the close up shot you did of the tofu after it was cooked :)

You are a genius with that Neapolitan cereal! I love that flavor of ice cream – bringing it to breakfast sounds like a scrumptious idea!

very cool about the frozen tofu.

I need to light a fire under my arse to follow suit as it would limit many of my foodexcuses to have it here and frozen and NOT NASTY.

believe it or not, i have never tried the frozen tofu thing! thanks for the tips, B!!!

and ive been wanting to try that bettery whey yogurt but it seems a bit pricey!

I am not at all a fan of the low fat or fat free foods. I always recommend for people to eat the real thing, just eat less of it. And that appies to all things- even chocolate cake. Eat the real thing, enjoy it, celebrate it. Fat free foods- like yogurt and cheeses that are dairy based, or going to have fat. The more fat is removed, the more processing it has to endure and the less health supportive it will be. Plus… it never tastes nearly as good!

I got the Better Whey of Life as a sample pack, but I’m pretty sure you can find it at Whole Foods. Although I would check their website, because it may not be at all locations.

The Better Whey of Life yogurt can be found at Whole Foods stores in about 14 states (I think). But if the WF in your area doesn’t carry it, I think you can ask the dairy manager to order the product for you.
