So Fresh and So Pure Pure.

Back to the old standby for breakfast yesterday morning. Kashi go lean, 1/2 scoop of Designer Whey Chocolate protein powder, 1 small banana, and USAM. Lots of protein and yumminess. If you do try the protein powder in cereal idea, make sure to stir it up well so you don’t get chunks of the powder. I also notice that it sticks to the spoon a little, but I don’t mind.

For lunch I had more of the eggplant mystery dish (no photo.. check my lunch from yesterday and the day before if you are interested) but I did get a comment from Jessy suggesting that she thinks the dish is called Turkish Mousaka.  After going to the site to read more about it, I think the Arabic version of Mousaka traditionally doesn’t include the ground meat, so I think that’s what I have been eating for the past 3 days. Good to know- thanks for taking the time to look that up Jessy!!

Along side the eggplant I had a quick salad with spring mix, tomatoes, hot banana peppers, and Hickory Smoked Tofurkey (love this). I didn’t use any dressing. There was enough flavor from the banana peppers and turkey fu’ to go around.

As a lunch snack I had 1/2 of a Wild Blueberry PURE Bar. After much word on the food blogging streets I knew I needed to try this little bar. Rebecca at PURE BAR was kind enough to send me a variety pack and I am having fun trying the different flavors. I will be providing full reviews of each as I try them!

What is a Pure Bar? I found the following description from the website:

I like that the PURE bars have simple ingredient lists that are chocked full of “good for you” items. (scroll down to see the Wild Blueberry bar ingredient list). The taste of this bar was sweet and tasted mainly of dates and nuts- the blueberry flavor wasn’t as prevalent as I expected it to be. The nuts in each bite added a flavor and texture that I really liked. Once out of the package, the bar’s composition reminded me a lot of a Larabar, only a different shape. The texture and consistency also remind me of Larabar, which is cool, because I am a Larabar fan. Plus 1 for Pure though, because I’m pretty certain there is no blueberry Larabar!

I had 1/2 of the bar with lunch because 20g of sugar is a lot for a snack. I know all of the sugar in the bar is natural sugars found in the fruit (besides the agave) but it’s still pretty sugary.

Overall, I liked the Wild Blueberry flavor, but I am excited to try the rest.

Dinner was a bean burrito bowl inspired by Andrea who was inspired by Sarah. All this inspiration turned into a delightful dish.

I sauteed mushrooms, TJ’s frozen pepper mix (stoplight peppers) with some Simply Organic fajita sauce mix. I then added some canned black beans to the skillet just to warm them up a bit. Once the bean mixture was in the bowl I added a scoop of Isaac’s homemade guac (YUM!), some medium salsa, and a couple grape tomatoes.

oooh – totally going to have to see if i can find those PURE bars – they sound great. i like that they’re organic! good call on just eating 1/2. you’re right – that is a good bit ‘o sugar for a snack – and it’s cool ’cause you get to enjoy the other half at a later time! perfect!

yay for more eggplant yumminess! and your salad with turkey fu’ (i love that ya call it turkey fu’) = mmmmmmm! i haven’t tried the hickory smoked flavor, maybe i’ll get some @ ETs next time i’m there (and see if they carry those PURE bars). do you happen to know if PURE takes back their wrappers? i know CLIF recycles their wrappers with the help of TerraCycle & i think that would be really cool if PURE did something like that, too!

thanks for the tip on stirring up the protein powder really well when adding it to cereal! i can’t wait to try this! :)

I need to find some pure bars I think. I finally thought I was in the loop after finding white chocolate macadamia nut luna bars, but now there is the elusive pure bar that everyone is raving about!!
