Meet and Greet

I had totally planned to eat oatmeal this morning, but the PB Puffins were calling my name. I ended up with a combo- kashi go lean, PB puffins, and Almond Breeze Unsweetened Almond Milk (USAM) I’m officially addicted.

The morning went by quickly a work and around 11 I started thinking of what I had a home that could be lunch. I couldn’t really think of anything and thought about just running over to Subway. I haven’t had a veggie sub in a long time. I knew I was eating dinner out so I decided to just head home and scrounge around for something I could call lunch. Which ended up being awesome. I forgot how much I like Trader Joe’s Organic Tomato and Roasted Red Pepper Soup. I think it’s one my favorite soups from TJ’s.

I also toasted a TJ’s mini WW pita. It was kind of like eating pita chips, which I dipped into the soup. Lastly, I had a little something sweet Kashi’s TLC Pumpkin Pie Bar! For dinner I met up with a the Vegetarian/Vegan group from Meetup.com. It was my first experience meeting up and I was excited because it was hosted at Da Lat, a delicious Vietnamese restaurant that I am rather fond of. It turned out to be really fun. Of course I like talking food so meeting and chatting with other veggies in the area was right up my alley. As usual, the food was awesome, I ordered a fresh spring roll and the Eggplant sauteed with shiitake mushrooms, tomato, lotus root, snow peas, sweet cabbage, and fresh basil in a light spicy sauce.

Obviously I took this picture at the restaurant so I told them about my food blog – hi to any meetup members who decided to check it out! I randomly got two pieces of crispy tofu in my dish and I wasn’t complaining one bit. But don’t let this picture fool you- this was just my first portion. I cleaned the entree plate by having about 3 more servings similar in size to this one. :) It was so good! If you live around Richmond you should totally try this restaurant! I highly recommend this dish and my “usual” which is the Bun Tofu Nuong Cha Gio Chay- Grilled tofu and crispy vegetable spring roll. This dish is so fun because you get to make your own spring rolls with rice wraps with the above ingredients plus chopped lettuce, cucumbers, bean sprouts, pickled carrots, scallions and warm rice noodles, basil and peanut sauce. Try it – I promise it’s fun.

I ran to Whole Foods after the meetup and grabbed a few things, which included lots of fruit. I couldn’t resist the Strawberries- but they weren’t as yummy as I had hoped. Oh well, the grapes were good!

I work part time at a Vietnamese restaurant and their food is actually pretty healthy. Except they deep fry their tofu so I no longer get tofu in my meals. Your meal looks a million times better than the food we serve! Yummers!

Awesome meetup! I think I might check out meetup.com again… I tried it almost a year ago but didn’t really find anything good. But a veg group sounds very cool :)

Mmm I love roasted red pepper and tomato soup! I’ve never tried the Trader Joe’s brand before, though. Sounds/looks good!

I’m excited to see this new product review rating system! The Kashi bars always look so delicious – I still haven’t tried the pumpkin flavor!

That meet up sounds like fun! I’ve never heard of that website, but I will definitely be checking it out now!
