I owe ya!

I hope everyone is having a fabtabulous weekend- I know I am.

Lots of people seemed to be interested in the macaroon recipe so I thought I would post it up. I got the recipe from The Whole Truth by Andrea Beaman:

Coconut Almond Macaroons

  • 2 egg whites
  • 1/4 cup granulated cane juice ( I used Wholesome Sweetners Organic Sucanat)
  • 2 tsp vanilla extract
  • 1/2 cup roasted almonds, minced
  • 1 1/2 cup dried shredded coconut (unsweetened)
  • Pinch of sea salt

Preheat your ov to 325 and line a cookie sheet with wax paper.  Beat the egg whites until they are foamy. Add vanilla extract, granulated cane juice and salt. Combine with shredded coconut and almonds. Drop batter by the tablespoon on to the cookie sheet. Bake for 20 minutes or until the gems are golden brown. It makes about 20 macaroons at about 50 calories per cookie.

In other news.. I got a new camera. Circuit City was having it’s going out of business sale and I snagged a Cannon SD990 for such a good deal. I am super excited- my pictures are looking lovely. Although, I’ve been taking more of friends than of food… so I don’t really have anything to post today :( Plus I need to read the guide a little more. I’ve always had a Kodak and the Cannon interface is a bit different. Soon enough you all will get to see the new camera in action.

I’m headed to DC tonight for ladies night with a bunch of awesome girls. Can’t wait!

Best Veggie Lasagna

I saw this recipe for the best vegetable lasagna on Kath’s blog – (it’s her mother-n-law’s recipe I think) It looked really delicious and I was in the mood to have some homemade lasagna. I followed the recipe, but made a few changes- I only did 2 layers because the layers were getting quite high and I didn’t want the lasagna to spew over in the ov. I only used 6 ww lasagna noodles and some different veggies because it’s I had on hand (spinach, zucchini, and broccoli) I actually put together the dish last night and kept it in the fridge overnight so that I could easily pop it in the ov tonight. No prep – just like having Stouffer’s lasagna… only better.

Before heading into the ov for 1 hour at 400.

I know many of you want the macaroon recipe so I’ll post that soon. I don’t know how much I’ll be posting this weekend though.. my friend is coming into town so I’ll be a busy bee!
