Yippee- It's Friday!

Friday is here, but I am stuck on Thursday so here are my eats:

Breakfast wasn’t oats- hard to believe I know, but I decided to have one of my favorites- an egg sandwich! Which consists of an Ezekiel English muffin, veggie sausage patty, 1 egg white, and some jelly on the egg and sausage side. And I put pumpkin butter on the plain side. AND GRAPES!

My boss planned a departmental lunch meeting and took us out to eat at a restaurant called Cajun Bangkok, I had never been there and at first I wasn’t too excited about the pick because it serves thai and creole fusion dishes and has little options for vegetarians on the menu. Despite the fact that the menu had no tofu dishes on it, I asked our server if I could sub out the meat in the dishes for tofu and he said yes. Although after all that,  I just ended up getting two appetizers that had shrimp in them. The first was Miang Kum – a toasted coconut platter served with little circles of collard greens (I’m sure traditionally it’s not collard greens, but that’s what it looked like to me) to make mini wraps – they were fit for a baby doll (seriously, so tiny), but I tend to love food that you get to roll up / create at the table (i.e  fajitas, lettuce wraps, make-your-own spring wraps, fondue)

The Miang Kum platter consisted of toasted coconut (the center piece) red onions, mango,  toasted peanuts, teeny tiny lime wedges (hidden behind the coconut bowl), dried shrimp, and jalopenos. It was also served with a sweet sauce that I used for almost every bite. And, these were great! As I said before I like making my own little wraps, so I enjoyed that part and the flavor was intense, but the perfect combination of sweet, savory, spicy. I would definitely go back to Cajun Bangkk and order these babies again or just make my own version at at home. Besides the sauce, everything else would be a piece of cake to throw together.

The other appetizer I ended up ordering was Tom Yum Gung- Spicy lemongrass shrimp soup. Since I was out with work I only brought my camera out once – no need to make a scene. Plus the Miang Kum is more interesting than the soup, but it was good- nice and spicy, the warmth of the soup was perfect for a cold day.

After eating I had to run home and let poor little Olive outside, she had been in her crate all morning so, of course she needed to tinkle big time. At home I decided that my baby doll wraps and soup at lunch left me feeling less than full so I broke out this bar and ate half of it.

Although, I have never heard of Chia seed- the bar was really good. Fruity and seedy, which I like. I will do a more in depth review soon, but right now I don’t have mucho time to go into detail- work is calling my name.

I headed to the gym straight after work and when I came home I was starving. I popped some b-nut squash in the ov, along with some plain tofu. Jumped in the shower, snacked on wheat thins and hummus until the stuff in the oven was done and then ate.

My shoestring b-nut squash fries got a little burnt. I didn’t mind really, but next time I will cut the pieces larger.

I’m excited because Isaac is finally coming home after being gone since last Friday. It will be nice to see him and for him to spend time with Olive- he missed her whole first week!

Loooove grapes and b-nut fries!! That bar?? Not so much. Glad you like it though, haha :-D

I just bought two of those Nature’s Path bars, I can’t wait to try them! They do seem promising.

Yummy egg sandwich breakfast, that used to be a classic when I was little :)

Foods you get to roll yourself are definitely more fun! It’s nice they were going to give you tofu though!

Cajun & thai fusion sounds…odd. But that wrap appetizer looks neat. Love the coconut in it!
