I woke up with morning and did some cleaning – dishes, bleaching the sink, etc. I really like having a clean kitch. After all the cleaning I had worked up quite an appetite.
I decided to to make Cinnamon Raisin Oatmeal:
- 1/2 cup oats
- 1 cup of water with a smidgen of Unsweetened Vanilla Almond milk
- 1/2 banana
- 2 sprinkles of cinnamon
- 1 tbsp rasins
All ingredients cooked on medium for about 5 minutes. When the stove was turned off:
- 1 tbsp ground flax (stirred in)
- 1 tbsp cinnamon raisin swirl peanut butter (on top)

The hefty bowl of oats kept me full until around 12:45. I came home and heated up a bit of my leftover Garlic-Teriyaki Tempeh with broccoli.

The Recipe: Garlic Teriyaki Tempeh with Broccoli
- 1 package of LightLife Three Grain Tempeh, cut into ¼ inch strips
- 2 tbsp low sodium soy sauce
- ¼ cup nutritional yeast flakes
- 1/8 cup olive oil
- ½ pound of brocolli
- 4 garlic cloves, sliced thin
Teriyaki Sauce:
- 1 tbsp. olive oil
- ¼ cup low sodium soy sauce
- ½ tbsp maple syrup
- 2 gloves of garlic, chopped fine
- ½ tsp. fresh ginger, minced
How to Prepare:
Combine all the teriyaki sauce ingredients in a small bowl and set aside. In a large skillet over medium-low heat brown the tempeh strips in a small amount of olive oil, adding more oil a little at a time as necessary. When tempeh is golden brown add teriyaki sauce and sprinkle generously with nutritional yeast and simmer tempeh for 10 minutes, turning occasionally. In another large skillet over medium heat, add a small amount of olive oil and saute broccoli for a few minutes. As the broccoli begins to brighten, add garlic and saute a few minutes longer. combine the teriyaki tempeh and broccoli-garlic saute and toss together. ENJOY!
Along with lunch I had some PB&J – the J with cottage cheese and the PB with Wasa crackers. There’s only one cracker pictured, but I had 3. The idea for a Wasa cracker/ cinnamon swirl PB combo is courtesy of the Whole Food’s sampling department.

At work I had a snack of TJ’s Simply The Best Trail Mix. It has dried pineapples, cranberries, cashews, and almonds. I buy it and then separate the large bag into snack size ziplock baggies for snacks of one serving.
I came home and then headed to Power Yoga – it was a great class. I had been disappointed with some of the instructors at my gym before but this time was great. It was an intense class- I feel that I might be sore tomorrow. Gotta love it!
I hurried home after the class and made a quick dinner of romaine lettuce, broccoli slaw, sauerkraut, red peppers, sugar snap peas, a Morningstar blackbean burger all topped with TJ’s Goddess dressing. I also ate the rest of the broccoli out of left over tempeh dish.

I just finished off a bowl of Kashi Go Lean mixed with Kashi Go Lean crunch.
Off to watch a documentary about Heath Ledger. I hope everyone is having a great week!!

I have not had too much success with tempeh in the past, this looks pretty good though, I may have to try it.
My iPod is oldschool too. In fact, the last time I turned it on it made a sad face at me so I really should look into getting it fixed, or getting a new one

Angie: I hadn’t had much success with tempeh either- I didn’t like the bitter aftertaste, but I’ve since tried different flavors that are less bitter. The LightLife three grain is my fav. I hope you’ll try it again.

Caroline: I actually didn’t like the Annie’s version when I tried it, but I love the TJ’s version. I haven’t had the Annie’s in a while so maybe that is the reason but TJ’s is cheaper and I like it a lot!

Beadie: I go to Golds Gym. Wednesday’s Power Yoga was the first yoga class I actually liked at Golds so I know what you mean. It really depends on the instructor. I love YOGA SOURCE, but it’s more $- since the classes as Golds are free.
