I had an old fav for breakfast this morning- banana oats with chocolate protein powder and flax. Creamy and delish as usual.

For lunch I had quite the unexpected combo- tofu and nut butter- but it was oh so good! My sammie inspired by Sharon from Snippets and Bites was made with almond butter, plain tofu, lettuce, tomato, and yellow bell pepper. After I saw the almond butter -tofu combo on her blog I knew I wanted to try it.

And for dinner I used another blog inspired recipe from Kath Eats. I saw this recipe for Cranberry Walnut Stuffed Acorn Squash the day I bought an acorn squash so basically I had to make it. I made some adjustments based on what I had on hand. For the topping I ended up using Kashi’s 7 grain pilaf, raisins, walnuts, goat cheese, and left out the brown sug.

It ended up being really good, but soo filling. I didn’t finish this whole half.
Sorry to be so quick – gotta go watch What’s Eating Gilbert Grape. I’ve never seen it and Isaac says its a must see!



Wow, I never would have thought about the AB/tofu combo, but it makes sense because I love peanut sauce! I’m definitely going to try it sometime!

I don’t know – I haven’t had tofu yet and AB/Tofu just isn’t right to me haha one of these days I’ll try it!
