Today has felt like Friday, but yet it’s been Thursday, all day- so sad. Oh well, for breakfast I made a quick bowl of cereal. I’m pretty much hooked on this combo- Kashi Go Lean and Kashi Go Lean Crunch, with my all time fav milk - Unsweetened Vanilla Almond Milk!

I had an unexpected meeting (aka a webinar my boss wanted me to sit in on) come up at work so I ended up having a really quick lunch break with just enough time to run home, whip up a quick lunch and run back. I ate some of this wrap as I walked back to work and ate the rest during webinar.
Unwrapped:

A ww tortilla wrapped around hummus, broccoli slaw, spinach, sugar snap peas, and left over garlic teriyaki tempeh and broccoli. There would have been some actual broccoli in the wrap, only I picked it all out yesterday while I was waiting for my veggie burger to cook!

I also had a blood orange and a TLC mock nutri-grain bar.
I went to the gym while Isaac went to play Ultimate. I did 30 minutes on the stair mill and 20 minutes on the bike as I read The New Rules of Marketing and PR . I decided just to stick with cardio because my bod was sore, particularly my legs and core, from power yoga yesterday. We did a lot standing poses and twists! I think I am going to make Wednesday night power yoga a ritual.
I came home and made a quick dinner of tofu and baby bok choy for Isaac and I. I had let the block of tofu “drain” while at the gym (so about an hour) I wrapped it in a paper towel with a dish towel wrapped around it, and then placed a cast iron skillet on top. It was pretty flattened out when I got home, but extracting the water is so worth it. I don’t normally do it for more than 10 minutes, because when I’m cooking dinner I don’t feel like waiting that long, but it really made the tofu’s texture perfect. I used my normal method for stir frying it. I cut it up one whole block into 1/2 inch cubes, put a little canola oil in the regular skillet (not cast iron) and stir fried the tofu for about 5 minutes. I then added about 2 tbsp of soy sauce and 2 tbsp nutritional yeast flakes and stir-fried it for about 4 minutes longer. It ended up being much firmer, crispier, and better tasting than my usual tofu! Isaac loved it too.
I used veri veri teryaki sauce for the bok choy- which is where the sesame seeds featured below come from.

One hour til Friday- can’t wait to get the weekend started. I excited because I’m going to see Lykke Li on Saturday!
