Tempeh and Eggplant

Tonight for dinner, I tried this recipe from Kath Eats. I had some of the Three grain tempeh and eggplant so I thought why not? The only thing I really changed was omitting the tomatoes because I didn’t have them, but I added some left over butternut squash. 

 

It was tasty – but Kath’s picture does way more justice to the dish. And for the record so far after tasting several variety’s of Light Life Tempeh I think the Three Grain is the BEST!

I think it looks very good! I still have yet to try tempeh…thanks for letting us know your favorite because I’ll be sure to look for it the first time I try!

I really like tempeh! This looks delicious, don’t fret about the photo! What is “light” about that brand? Do you use light tofu, too?

I still haven’t made anything with tempeh. The last time I cooked it was probably 3 years ago. I need to pick some up.

eatingbender – I definitely recommend the 3 grain- especially for the first try.

Hangry – I don’t think anything is light about the brand, Light Life is just the name. They make a bunch of veggie options (they’re in the produce section of the grocery store) I don’t use light tofu.

Beadie – I am going to have to get used to your name being Beadie now!! I thought who is Beadie and then I remembered your last post!! Good way to differentiate though.
