Twice Baked Tofu

You can probably guess from the shape of the nut butter that this came from some sort of package – and you would be correct. Jennifer Barney over at Barney Butter kindly offered to send me some of her famous Almond Butter. I know, I know this nut butter has been featured all over blog world, but I am super excited that I finally get to try this infamous almond butter. So here is its debut – in oatmeal, of course.

Tonight for dinner I decided to have the last 2 pieces of tofu that I prepared Sunday night. They were in the fridge and cold so I thought instead of the tofu getting squishy from heating it up in the microwave that I would bake it again in our toaster oven. Turns out that twice baked tofu was a great idea. I put the pieces in for about 7 minutes at 450 and they came out crispy on the outside and soft on the inside as all good tofu should be – at least in my humble opinion.

And yes I realize my broccoli is turning yellow, but I check it out on google and some strangers said that yellow broccoli is fine to eat. So I trusted said strangers and ate up.

that tofu looks so tasty!! And i’ve eaten broccoli that was turning yellow… haven’t noticed anything to date ;-)

I love how you trusted the strangers. Maybe the yellow means it has extra nutrients or something. That Barney Butter sure looks yummy!

I’m JEALOUS of your Barney Butter! Love that they come in 90 calorie packets, that so convenient.

Your dinner looks great, I’m a broccoli fiend, as long as it’s not purple, I’ll probably eat it ;)

Yayyyyy Barney Butter!!!! I’m so sad that my samples are all gone :(

I love your idea for twice-baked tofu! I definitely think tofu is best when it’s crispy on the outside and slightly soft on the inside. Too mushy and it’s a big no for me.
