The Graduate

This morning I decided to forego the granola on top of my oats, but everything else was consistent. I put half a banana in the oats and cinnamon while cooking and ate the other half as they cooked. I added some ground flax on top with a spoonful of creamy natural pb.

Around 11:30 I had an apple for a snack – I chopped it up into slices though. I like to eat my fruit in pieces.

I had an in person INTERVIEW today. AND, I had a company call for a preliminary phone interview for another position. It makes me feel better than I am at least getting some progress made – it’s been a long time of looking and applying and not hearing anything.

I think I must have gotten giddy from all the interviews, because I never really got hungry for lunch. I ended up making this salad at 2:30 PM because I needed to eat. It was made with spinach, cucumbers, kidney beans, avocado, and beets.

Now I realize why I usually take pictures before the dressing. It just doesn’t look as good once the dressing it on.

For a lunch side item I had this SF pudding pack with pecans. I really liked the crunch in the pudding and they added some protein and fat to the pudding.

For dinner I wanted to use up some tofu I had in the fridge so I just paired it with some other things…cous cous, and steamed veggies with shoyu. Ended up being quite the balanced meal.100_1707.JPG

I’ll probably have a snack later. Plans are to watch The Graduate because.. gasp… I haven’t seen it.

Your dinner looks mighty tasty, especially the veggies. Great idea to add healthy fat/protein to your pudding.

OMG – One of the GREATEST films of all freaking time and SO perfect for our age group! Ahh *sigh* I totally wish I were seeing it for the first time tonight… Simply amazing :) Enjoy it boo!

I swear your oatmeal gets prettier every day.

And I’m with you on the dressing, it definitely “uglifies” many a salad. Such a shame!

CONGRATS on the interviews. That’s great progress. I hope something works out!

And just out of curiousity, what kind of camera do you use? Your pictures are so clear…

Gosh, you always have such gorgeous interviews! I love the flax in that oatmeal pic and that tofu looks mouthwateringly good!

Congrats on the interview! That’s definitely a step in the right direction, and I wish you the best of luck!

I’ve never seen The Graduate, either!

Again, lovely photos. Have I asked what kind of camera you use? These are just amazing.

I love all of your plants in the background of that apple. Do you have a backyard in Richmond? I long for a backyard someday.

suzanne – I cook my tofu different ways, usually either stir fry or bake. For this particular meal I used the baking method and I have my recipe posted here. You should definitely try it – just make sure you buy the extra firm or firm tofu. The silken or soft tofu is better used for dessert recipes or smoothies.

ttfn300- It had been on my list for a while as well. Sadly, I fell asleep last night and didn’t get to finish it. I will probably finish it today.

Julz – So far the amount I have watched has been really good. I was just too tired and we started the movie late. I’ll finish it today.

Kristie- Thank you for the oatmeal comment and the congratulations on the interviews. I use a Kodak Easyshare v1003 with 10 mega pixels. I’ve had it for over a year and now I think they have a new version so it’s been discontinued- but if a store still has it in stock you can get it for around 150.00.

been like “YOU HAVE TO SEE IT”…. thats how it was for me.

I do have a backyard. We will in a duplex so we share it with the girls downstairs, but its pretty large and we have a back deck all to ourselves. It was a definite plus because we moved from a renovated warehouse apt. that didn’t have any sunlight or windows that opened!!
