A couple people commented on my last post asking for the cookie recipe. I’m sorry, but I didn’t even think to post the recipe for the cookies because I just used my Betty Crocker cookbook Chocolate Chip Cookie recipe. I made a few alternations, but nothing crazy. If I were trying to make the cookies healthier I would have made more changes, but they were intended to be for Isaac and his ultimate frisbee team. They are full fat and sugar- as the team needs all the energy they can get when playing. Most think of frisbee as being a lax sport, but ultimate is pretty intense. The bad part is that Isaac went out of town yesterday and took the cookies. Well lets just say that the cookies were for today, the day of the tournament, but he can’t be trusted with a tupperware container of chocolate chip oatmeal cookies. He ate most of the cookies while he was working and there were only about 6 left for the team. 
Here is the recipe I used:
3/4 cup sugar
3/4 cup packed brown sugar
1 cup butter (2 sticks), softened
1 teaspoon vanilla
1 large egg
2 1/4 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups of semi sweet chocolate chips ( I used 60% cocoa and chopped the chips up in the chopper because I only had one cup to use)
1 cup of quick cooking oats
- Heat oven to 375
- Beat sugars, butter, vanilla and egg in large bowl with mixer. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips and oats.
- Drop cookies by the spoonful onto an ungreased cookie sheet.
- Bake 8-10 minutes or until light brown (the centers will be soft). Cool 1 to 2 minutes, remove from cookie sheet to wire rack.

yum! i love oatmeal cookies! even by using the “real” ingredients, they’re still much healthier than other cookie variations out there.

Erin- I made them really late on Friday night, and Isaac left with them Saturday morning at 6 am. So I kind of missed my chance to taste one. :/
