I had a pretty relaxing weekend – we didn’t do anything too exciting. I did go shopping and got some shoes!! This was really exciting for me because I never find shoes I like. I seriously have the hardest time. Well, I want to DSW and got not one, but 2 pairs of pumps – I didn’t, until this weekend, own a single pair of modern pumps. I have one pair that I wear to interviews and what not, but nothing cute. So, needless to say I was really excited. They are similar, but different brands and different colors. Let’s just hope they don’t kill me tootsies.
So I have a random assortment of my foods for your viewing pleasure. For lunch on Saturday I had a lean cuisine, the spa collection hasn’t failed me yet. They’ve all tasted pretty good and looked similar to the photo on the box. I also had a small bowl of fiber one cereal after this.

For dinner I cut up some red cabbage, which I thought was quite pretty.
I had this salad, along with the red cabbage and salmon. The cabbage needed to cook longer because it was still tough. I was hungry though and couldn’t wait it out. This happens to me often. I want a meal to be done faster and then the taste is compromised. I should probably start cooking before I am ravenous. That might help.

I had more cereal for a snack after dinner.
This morning I woke up and I decided to try cooking buckwheat (groats) for breakfast. I though it would be good to try them on a weekend, when I wasn’t rushed, since the recipe said they take 15-20 minutes to cook. I think I did something wrong – probably too high of heat. I used 1/2 cup of buckwheat groats with 1 cup of water and 1/2 of a banana. After about 5 minutes all the water was absorbed and the buckwheat was sticking to the pot. I decided to add extra water – that was absorbed within minutes. I added a bit more, it was absorbed quickly as well. After about 10 minutes I decided to try it. I hated it! I didn’t like the texture or the flavor, i guess nutty is a good word to describe it – definitely not creamy like oats. It sucked but I ended up throwing the whole batch away and made oats:

As usual- they were delish. I’ve heard that buckwheat is different, but I like buckwheat pancakes so I thought I should try it as a hot breakfast cereal. Often people get cream of buckwheat so perhaps I would like that, if it’s more creamy. Although, based on this mornings experience I don’t know if I’d like the taste of it compared to oats, even if it was cooked properly or more creamy. I guess I am just a sucker for oatmeal now.
Anyone have any experiences with buckwheat as a hot cereal? Good, bad, ugly, let me know!

Buckwheat is sort of a Ukrainian staple so I’ve been eating it since I was a kid…I buy it in pre-packaged boil-in-a- bag sort of deal that I throw in water and let boil. Then I drain the water and they’re ready!
To cook it without the bag, I think my grandma runs it under water until the water is transparent, then boils it on a stove in water and a pinch of salt until the water is absorbed on medium heat.
My grandma’s favorite way of serving them is in warm milk topped with sugar or honey, like a warm cereal.
I hope your experience with it goes better next time, I love buckwheat so much! It’s great for you as well.

i’m a sucker for oatmeal, too
the salmon and red cabbage looks beautiful– sometimes it’s hard for me to wait for things to cook all the way. i’ve eaten one too many raw baked sweet potatoes.

Shoe shopping is tough for me too. I’ve never been a shoe shopping fan. And I don’t own any pumps. Funny enough I was actually looking at some today. No luck though. Meh.
I’ll remember the lean cuisine spa meals next time I’m looking for a quick dinner… I don’t think I’ve ever tried them before. Yours looks quite tasty though!
I always cook when I’m hungry too, which is why I either always end up making quick meals, or snacking way too much on what I’m making. But I just can’t do the cooking before starving thing. If I’m not overly hungry then I’m usually just not in the mood to cook… what does one do with such a dilemma??

I’ve never tried buckwheat before, but I am DEFINITELY a sucker for oatmeal. Substitutions just never quite compare
