Starting from right now, my breakfast this AM. I had some banana oats with flax, gogi berry and walnut granola, blueberries, and a huge squirt drizzle of sugar free maple syrup. I am supporting America by eating red, white, and blue, see:

Going back in time with last night’s dinner, which was delicious. We fired up our new grill and made salmon and veggies. And, I baked a couple sweet potatoes for sides. The squash was great, but the grilled eggplant was bitter tasting and starchy. I’ve had this happen to me before with eggplant and zucchini but I don’t know the reason… anyone know?
After dinner we went to the movies- we debating seeing either Batman or Step Brothers. Because of starting times and length we choose Step Brothers – it was OKAY, definitely not worth the $8 for a movie ticket, possible worth $4 for a rental… I don’t know though, only if it’s a Friday night at Blockbuster and it’s the only movie available to rent. I was getting antsy and ready to get out the theater by the time it was over. Will Ferrel is comical and there were parts of the movie that were funny, but honestly he doesn’t do much for me- I can only take so much of that type of humor. But on a funny movie note, Forgetting Sarah Marshal is one of the funniest movies I have seen in a LONG time and I recommend it to anyone that hasn’t seen it. Although, I don’t think it’s out on DVD yet.

your oatmeal looks soooo good! what do the gogi berries taste like? I’ve never had them before but i see them at my grocery store all the time. have a great sunday!
Eggplant: The same thing happened to me when I started cooking it, so I asked my mom who makes the best eggplant parm. I swear she is not crazy, but this is what she said:
Some people salt the eggplant, but she just peels, slices and puts it under a paper towel. Then she pounds it. When she picks the paper towel up a brown liquid is visible on it, which supposedly is the bitter juice. She also believes that the females, which have more seeds, are more bitter. You can tell a female from a male because (of course) the male is longer and thinner and the female is rounder.

Aw I heard Step Brothers was hilarious! I’m so discouraged now! Ha kidding. I might still see it. I usually don’t like spending theatre prices on comedies anyway though, I try to save those for the rentals and stick with the big time hyped movies for the theatres.
On a food note, loving the pretty patriotic oatmeal colours you’ve got going on there
aww i was looking forward to step brothers because i love will f! maybe i’ll wait until it comes out on DVD now. a few of his movies havent been that funny recently.

Melissa- I’ve only have gogi berries dried and they aren’t my favorite plain, they aren’t as sweet as regular berries such as strawberries or blueberries, but they are good for you!

caitlinbo- I agree, I really liked Old School but I haven’t been that impressed with will lately.
Ohh the same thing happen to me with eggplant a couple of years ago and i have not been able to get the courage to eat it again… I am totally turned off by it… your oatmeal looks beautiful and patriotic of course!

Hilarious that the female eggplants have to be the fat ones.
Yeah, you’re supposed to salt it so the water drains out, and then rinse it so it’s not salty. I never do and I don’t really have any problems, but I’m sure I’ll run into one of those bitter lady eggplants eventually. I’ve never heard of it with zucchini before, though – maybe it grew too big or something?
you should buy the eggplant and use it as soon as possible. the longer it sits, the more ripe, and starchier it becomes. good luck! i used to hate eggplants but now i love them, they just have to be prepared the right way or its completely unfair too the poor guy!!
You must slice & salt your eggplant for a good 20 to 30 minutes before cooking – the salt takes the bitterness out of the vegetable: you will see water extracted from the veggie after that time frame… then you can just take a damp paper towel, wipe off the salt & residue & cook as you would like!
