Guess what's back!

Wheatberries, of course! I soaked some yesterday and cooked them up last night and then added them to my oatmeal this morning. I also stirred in about a teaspoon of better n peanut butter, which made it just sweet enough to not need any brown sugar on top. Today after work I go to pick up the keys from our new landlord. I am excited about moving because there are a couple things that are really annoying about our apartment now. For one, we don’t have windows that open or that let in any sunlight. So as the property manager said when we moved in “it’s like we are in our own little world” However, we didn’t realize what she meant by that until our first night there we both slept til 10AM and thought it was 7AM still because there wasn’t any sunlight. Of course, this could be good for some people, but not me who has to wake up early for work. Also, all my plants have died!!

And secondly, the walls are paper thin, we are surrounded by 4 neighbors and our one nieghbor is really loud. We actually had to rearange our apartment when we moved in because our bedroom was lined up with his living room…. which was not conducive to going to sleep because he plays video games all night and yells at the TV. Needless to say we are happy about being about to move!

Hi Britt! Just stumbled across your blog, and I love it. I too lost 20lbs between my hs senior year and freshman year of college…starting a food journal and seeing examples of healthy eating sure did the trick! I have heard so many people talk about the Freshman 15, which made me so nervous about the dining hall food and such…but I’ve found it actually isn’t hard to eat healthy with such a beautiful array of veggies at the salad bar, available at every meal!!! Anyway, congrats on your weight loss, healthy lifestyle and healthy relationship with food. All very inspiring!!!

Anyway, I’ve had a Betty Crocker cupcake mix chillin’ in my pantry for months. Could you please give me the recipe for how to make them “healthier”? Something about swapping out oil for applesauce, and ground flax/water for the eggs??

arielle- I bet. I hate opera.

jessica- On my box it said the “low fat” alternative was to combine these ingredients with the dry mix: 1 1/4 c water, 1/4 unsweetened applesauce, and the 3 eggs. AND, Reduce baking time by 1-2 mins.

In place of the 3 eggs, because I only had 1 egg in the fridge, I looked up substitutions online and found that for 2 eggs you can use ground flax (2 tbsps) with 1/2 cup of water mixed together until they get an egg like consistency. For 1 egg you would use 1/4 cup water and 1 tablespoon of the ground flax. Hope that helps!! Make sure that you don’t buy pre-ground flax – it goes rancid unless kept in the fridge. Buy whole flax seeds and grind them. I made mine ground by using a coffee bean grinder.

What type of salad dressing do you use? It’s so hard to find good ones that aren’t artificial.

Also, I just found your blog and was looking through some archives. I saw one day you had wallaby yogurt. I recently heard about that. What is it like? I hate fage- find it too thick, but find most other supermarket yogurts too fake. How many calories does each one have? Any other yogurt brands you recommend? Thanks so much and I love the title of your blog :)

Oh sorry just to add to my previous question. I noticed you eat alot of salads, do you buy prepackaged lettuce and veggies or cut your own? Cutting your own taste more fresh and is cheaper, but I am usually so tired after school and have homework, etc. How do you stay motivated to cut fresh veggies and lettuce?

That sucks about your apartment. No sunlight? I would be so depressed! But woo for moving, hopefully your new place has lots of sunlight?

kathleen: I use a bunch of different dressings. Right now I have garlic expressions (one of my favorites), a honey dijon dressing from a local restaurant, Ken’s raspberry vinaigrette. And a light balsamic vinaigrette. I usually look for ones that are oil based rather than cream based and less than 80 calories per serving. I don’t buy bagged salad because liek you said it’s not a fresh and it goes bad quickly. I usually just buy hearts of romaine and cut it up the night before to pack my salad for lunch the next day. Lots of times I buy veggies and precut them all so they are ready to throw into salads all week. Thats a good way to stay motivated to eat them.

Yogurt wise- I like the wallaby yogurt, it definitely isn’t as thick as fage and its good. The maple flavor was my favorite so far. I don’t remember the calories though. I usually buy stony field farm yogurt…. it isn’t too creamy and the light or non fat has only 130-140 calories.

Kristie- It does have lots of sunlight. 25 windows to be exact!
