Wrapping up the Tofu and Cereaious Issues

by eatingbirdfood on July 30, 2008

Breakfast was banana oats, wheatberries, flax, and raisins. I started to get really snacky after b-fast and ate some of an orange, which was quite gross and flavorless so I threw it out after eating half. Then I ate some raisins by the handful (about 2 handfuls). Things started getting out of control when I started getting half cup servings out of the Smart Start Cinnamon Raisin cereal box, I probably had 4 half cup servings. Again with cereal being addictive, i know. I just can’t refrian from buying it when I have milk in the fridge because I don’t use milk for anything else besides cereal.  I buy cereal to use the milk up but I start to snack on it dry and don’t end using all the milk, and then need to buy more cereal… see where this leads me.

I went running two miles in the heat today at about 12:00PM, I’ve decided it’s too hot for me to run outside in the middle of day, I am going to stick to early mornings or lat evenings to run. I don’t know why I thought it would be a good idea to go running at 12? For lunch you will be happy to know that I used the last of my tofu supply to make a delicious wrap with some roasted red pepper hummus, baby spinach mix, and tomatoes all wrapped in a flat-out spinach wrap:

I’ve been continuing my snackiness as well…. after lunch I has some instant chocolate pudding made with skim milk (trying to get rid of the milk), some strawberries and blueberries, and I hate to admit it but 3 half cup servings of the CEREAL.

On a positive note, I feel as though I am making some headway on my job hunt. I got a call from a recruiter today and I also got in touch with a guy from my running group about another position I am interested in. More details to come. Obviously I still haven’t had any interviews yet but at least I am getting to talk to people.

Two Times the Tofu

by eatingbirdfood on July 29, 2008

My left over tofu made it’s way onto my salad today at lunch, along with some wheatberries. This was a delicious lunch. And, today was pretty productive, I went to Barnes and Noble for a couple hours this morning and read books about career finding and marketing and then went over to the health/fitness/dieting section because that’s always where I am drawn to. Which still leads me to believe I need to combine my passion for health and food with my degree in marketing…. no such luck finding any options to do that as of yet.

I went to the gym. Then surprise… for dinner I ate some more tofu:

This time I reheated some bulger and layered on a heaping pile of sauteed squash and tomatoes. Then added the left over spicy tofu. I promise I only have one more piece to eat so you won’t have to look at any more tofu pictures for a while.

Last but not least, Isaac would be excited to know I posted this, however he will not know, because he doesn’t read my blog.

Here is Isaac driving our new Bentley that I was able to buy with all my money while being unemployed that Isaac was able to take me for a ride in while waiting to pick up his boss. By the looks of the car you would think his boss is a gansta, I promise he is just a middle age white guy.

Spicing up Tofu

July 28, 2008

I was inspired a while back from Gliding Calm’s post about baked tofu and I had her star ingredients photo saved on a stickie note (on my desktop screen) so I would remember to make some in the near future.  I used the ingredients she had listed to make a sauce/ marinade: sesame oil ( [...]

Salsa LATTA

July 28, 2008

My extremely large salad from dinner last night quickly became my rather large salad for lunch today with some added wheat berries for fun. I love being able to have 2 meals out of one restaurant meal. Usually salad isn’t that great to take home with you, but this was actually really good for leftover [...]

Mexican

July 28, 2008

I was craving mexican food, more specifically guacamole, last night so I convinced Isaac that we should go to this place called Baja Bean. We got guac, which was really good and enticed me to eat way too many chips… they were actually less chips and more deep fried torillas. I knew this because I used [...]

Sweet Vegan Snack

July 26, 2008

I didn’t do all that much today, I had a late night last night and felt like staying home all day -that’s what one dollar drinks and lots of dancing will do to you. So after sitting around in my gym clothes all day because I planned on making it there at some point (p.s [...]
