Today is Sunday so it was the first day since Monday I have gotten to see I. And, I only get to see him for about 10 hours until he heads back to Maryland for more Montessori training. Then I get to look foward to seeing him again next weekend. Before he arrived today I went to a class at the gym I go to and then went to the local health food store Ellwood Thompsons. I wanted to find vital wheat gluten so I could make the chickpea cutlets that everyone talks about but they were sold out! I did get some wheat berries and some prepared food for lunch. BBQ tofu and chili sweet potatoes. Which I came home and heated up and eat with a salad. The tofu was really good. I had never had bbq tofu. I want to try to make my own version soon!
