Last night was really fun. I made cupcakes from a box, but I did the low fat version and substitued apple sauce and water for the oil. I also only have 1 egg and it called for 3 so after researching online I found that you can use 1 tablespoon of ground flax with 1/4 cup of water as a sub for 1 egg. It’s pretty odd actually because when you stir the water and ground flax together it becomes the consistency of egg whites. Definitely a good thing to know if ever you run out of eggs or just want to add some flax to your baked goods. No one that eat the cupcakes noticed the difference either- they turned out great. I’m glad they were “healthier” because I ate a lot more than I ever planned on. Oh well. We walked from our house, about 15 blocks or more to the first bar and walked home so we got some exercise, which is a good thing since I was drinking beer and eating cupcakes all night. For dinner I had a hummus platter (shared with Isaac) and a pear and walnut salad at New York Deli.
Drinking wise, I had a Celis White beer, a purple haze beer, and then a snake bite (cider and lager with black currant juice). The snake bite was in memory of Britt and I’s trip to Newquay, England 2 summers ago where we drank snake bites every time we went out.

I went to RPM and if by ride of your life they meant sweatiest ride of your life than yea it holds up to the name. The teacher mentioned at the end of class that he was teaching an amazing abs class in 5 minutes so I stuck around for that as well. It was a good workout, which I needed because while my family was visiting I slacked a bit. I came home and was starving so I made some lunch, which consisted of a salad with 1/2 a black bean burger on top (same as last night’s dinner) some kiwi and grapes, and a few sour cream and onion baked lays. When those suckers are in the house I can’t get enough. I don’t usually buy them for that reason, but my mom picked them out and I didn’t complain. There are only a few left so my little cup at lunch today was mostly pieces of chips. 


I am really annoyed with this batch of grapes because they specifically say on the bag, and on the sign at the grocery, that they are SEEDLESS, which is the kind I like. I do not like seeds in my grapes! I can eat other fruits with seeds, grapes I just can’t do it, well I can but I don’t like to. Okay Kroger.. get your sign and packaging correct next time, thanks! Enough ranting.
So this afternoon I’m just hanging out wait for Isaac to return home for one night.. and then going out with Britt and her boyfriend. I will try to get some good photos of tonight’s antics.
